Green Garnet is an inter-tidal oyster started in trays, and then grown out in cages over a mixed sand and mud bottom. They are individually hand harvested.
Surf Diamonds grow on an inter-tidal farm located on a sand bottom beach. They get full exposure to the sweeping 11 foot tides that move across the north side of Cape Cod twice every day. To withstand the pull of the tide the oysters are raised in stacked wire cage “oyster condominiums”.
Little Gem, a true “petite” oyster grown slowly in a deep water section of a grant on the south side of Cape Cod. After leaving their nursery bags they are entirely sub-tidal. These oysters are drag harvested in small batches with great care.
Jade Shoals are grown in a fully sub-tidal environment. The oysters are started in bags and then moved to rest on a mixed mud and rock bottom. There they slowly grow out in the cool waters of a protected grant on the south shore of Cape Cod. Jade Shoals are drag harvested in small batches.
