Clown Shoe is the largest oyster we offer. Full of rich oyster flavor from its long slow grow out; as much as five years on the bottom of a protected bay south of Cape Cod. It is very rare to be able to offer a New England grown oyster of this size, and almost unheard of in a product of this quality. May Flower – 五月花
May Flower oysters are grown on inter-tidal flats located in the middle of the premier oyster bay of the South Shore of Massachusetts. Although inter-tidal the grant is off shore and accessible only by boat. The oysters are started in a protected nursery system and then grown out directly on the nutrient rich silt bottom.
Surf Diamond – 波浪钻
Surf Diamonds grow on an inter-tidal farm located on a sand bottom beach. They get full exposure to the sweeping 11 foot tides that move across the north side of Cape Cod twice every day. To withstand the pull of the tide the oysters are raised in stacked wire cage “oyster condominiums”.
Little Gem – 肥宝贝
Little Gem, a true “petite” oyster grown slowly in a deep water section of a grant on the south side of Cape Cod. After leaving their nursery bags they are entirely sub-tidal. These oysters are drag harvested in small batches with great care.
Jade Shoals – 玉浅滩
Jade Shoals are grown in a fully sub-tidal environment. The oysters are started in bags and then moved to rest on a mixed mud and rock bottom. There they slowly grow out in the cool waters of a protected grant on the south shore of Cape Cod. Jade Shoals are drag harvested in small batches.
