Surf Diamonds grow on an inter-tidal farm located on a sand bottom beach. They get full exposure to the sweeping 11 foot tides that move across the north side of Cape Cod twice every day. To withstand the pull of the tide the oysters are raised in stacked wire cage “oyster condominiums”.

Their direct exposure to the water of the North Atlantic gives them a brisk full ocean salinity, and bright wave polished shells.   Surf Diamonds have a fantastic meat to shell weight ratio. That with their resilient adductor muscle makes them a great choice to ship via air freight.
